Marinated Strawberries with Basil
Argentina

Yield : 4 Servings
Ingredients:
1 pound fresh strawberries
3/4 cup water
1 cup sugar
1/2 teaspoon lemon rind -- finely grated
2 tablespoons fresh basil -- finely chopped
Method:
1. Wash the strawberries and pat them dry with paper towels.
2. Quarter
the strawberries and place them in a large mixing bowl. Set them
aside.
3. To make the syrup, combine the water, sugar and lemon rind in a small saucepan. Dissolve the sugar over low heat, stirring occasionally. Once the sugar is dissolved, increase the heat and boil the syrup for five minutes or until slightly reduced. Set aside to cool.
4. Pour the cooled syrup over the strawberries and stir in the basil. Serve immediately, or if you like, chill for a couple of hours before serving.
